Kokina

Kokina is an old Istanbul tradition to celebrate the arrival of Christmas and the winter. To make kokina, you put together two plants that grow in the wild in Istanbul: Knee Holly and Anatolian Sarsaparilla. The making and selling of kokina is a tradition passed down from the Rum (Roman from the East Roman Empire, in other words, the Byzantium) who are the Turkish Greeks who made up a large number of the inhabitants of Constantinople, later Istanbul. It is said that the name kokina comes from kokkino, the Greek word for red.
